This toasty green tea from the Takaki family pushes what’s possible with a deeper firing of the leaves than what you might find in a sencha. The consequent nuttiness and sugar development curb any kind of grassy astringency and bring focus to notes of toasted rice, sweet artichoke and light hints of peach. Shiraore (called karigane or kukicha in other areas of Japan) is essentially stem tea, a beautiful byproduct of sencha production.
