Notes:

We had the good fortune of going through the finish firing process of this sencha with the Takaki family in October.
We tasted the same batch fired to 86, 92 and 96˚C to get a sense of how the flavours transform through the Maillard reaction: sugar development in the leaf at 86 is more subdued, while 96 draws out flavours of sweet corn and edamame. Takaki adjusts his technique to meet the unique qualities of each batch.
