We had the great fortune to visit the Takaki family right as they were processing their annual crimson tea production. The JagaSilk team was able to participate and thus hold this tea dear. We rolled it, withered it, and ﬁred it with the Takakis and had an unforgettable study. Sugared yam, cooked butter and lemon zest ﬂavours come through in this unusual origin for a crimson. Both bassy and light, it inhabits its own spicy world of chocolate and burnt sugar deliciousness.
