Mr. Yamaguchi’s Inkyo field is another example of his work to transition his tea fields to organic. With notes of honey nut cheerios, carob and sweet snap peas, this is a fragrant and raw maccha that is not for the feint of heart. It has something to say and pulls no punches. Less about umami, and more about aromatics, pure soil and heart.
