Uncle Zhang has charcoal fired the Huangshan Morning cultivar to bring us an exquisite yellow tea.
His technique provides a delicious smoked asparagus like flavour foundation and violet nose.
The leaves are yellowed by “stewing” them, where the farmer covers piles of the leaves during enzymatic oxidation, curbing the tannin for a smoother, sweeter tea. Previously considered a lost style, it can be traced back to the Ming Dynasty as an imperial tribute.
