Pip’s Maccha Biscotti

  • 2 cups all purpose flour
  • 2 tbsp sifted maccha
  • 2 tbsp water
  • 1 ½ tsp baking powder
  • 2/3 cup brown or cane sugar
  • 1/3 cup nuts (hazelnut, etc)
  • 2 eggs, lightly beaten
  • 1 tsp vanilla extract
  1. Preheat the oven to 160 degrees Celsius
  2. Put flour, baking powder, sugar, nuts and maccha in a bowl and mix together
  3. Add the eggs, vanilla, & water, and mix well until a soft dough forms (this will take a while, as the dough needs to be really worked so that its stays together and has a good feel).
  4. Place the log on a greased baking tray on bake for 30 minutes
  5. Remove from the oven and allow to cool completely.
  6. Slice the log into 8 pieces and place on a lined baking tray. Bake for 10-15 minutes or until the biscotti are crisp
  7. Store in an airtight container
  8. Option: Half-dipping in chocolate is delicious
